Gorgeous aromatics of citrus zest, lemon balm, green apple, chamomile flower, and orchard fruit, but with more refreshing acidity than a typical white Rhône. Muscular structure (think Hermitage Blanc), but with incredible minerality, and a long, exacting finish. Fermented in Amphora and Concrete and matured in large, neutral foudre, no oak aromas are imparted on this pure, powerful white wine. Pair with grilled swordfish, game fowl, or pork loin!
