This Pinot Noir is a remarkably well-crafted wine offered at an outstanding value. Though the grapes come from France's Languedoc region, typically associated with warmer climates, this wine hails from the cooler sub-region of Limoux, where limestone soils and moderate temperatures create an ideal growing environment. In fact, sparkling wine was practically invented here, thanks to the area's elevation—vines grow between 900 and 1,700 feet, ensuring a cooler climate. The Pinot Noir grapes are destemmed and left as whole berries for a slow, natural fermentation. About half of the wine is aged for six months in barrels, with around 10% in new oak, adding just the right touch of complexity to this elegant wine.
