In the vinification process, each varietal from every vineyard undergoes separate fermentation in oak casks, allowing individual characteristics to shine. Assemblage occurs in enamel-lined tanks before bottling, ensuring a balanced blend. Maceration lasts 12 to 15 days, with fermentation initiated naturally, without added yeast. The wine is then aged for 12 months; notably, the Merlot is aged in barriques, with 30% new oak, enhancing its depth and complexity.
