The Foucault brothers' winemaking philosophy is rooted in minimal intervention, ultra-low yields, absence of chemicals or pesticides, hand-harvested grapes, natural yeast fermentation, no filtration or fining, and the use of gravity for bottling after aging in oak for up to 24 months.
