Silex, the soil in which today’s wine is grown, is primarily composed of flint that sits along a fault line under Sancerre. It produces the leanest wines of the three soil types, with a focus on minerality more than fruit. If you’re coming for this wine, you’re coming because you love minerality – and staying because it’s hot out and this wine provides all the refreshment you’ll need! Lees aging helps to make the minerality pleasant instead of overpowering, and the wine sings with grass and orange citrus notes on the back palate.
